<p><strong>JFK was our young new president. Elvis, Roy Orbison and Patsy Kline topped the charts. A large pizza cost a buck. WWII Veteran Arthur Castraberti had a wife, three young children, a good education and a great job with Prince Spaghetti in Lowell, MA. </strong></p>
<p><strong>The year was 1961 and Arthur’s life was about to change.</strong></p>
<p>Prince Spaghetti owned a 12 seat drive-in pizza stand and “spaghetti house” in Saugus—often referred to as an Italian Howard Johnson’s. It was losing money. Prince’s president thought Arthur could turn it around. He had no idea just how right he was. But Arthur was not interested in management by committee. He wanted to own the place.</p>

<p>Arthur and Prince made a deal. No money down, no interest. Arthur had to make good on the failed business’ debts in 10 years and the place was his.</p>
<p>“I had never been in a restaurant kitchen until I bought one,” says Arthur. “When I walked in, I saw two employees—a waitress in the corner reading, and a cook flat on his back asleep. I introduced myself and fired them both. ’But how will you run the place without us?’ they protested. ‘Oh, a great deal better, I imagine.’“</p>
<p>Arthur called his 65 year old father, Oreste. “You know how to make sauce, don’t you pop? Well, I could use your help.” Oreste, a talented cook, worked with Arthur to develop the original Prince Sauce that has made them famous today.</p>

<p>Sales climbed, but they were not enough to cover the debt. “I owed more than I ever thought I could pay. That was my incentive to work harder,” says Arthur. With a family to support and a mortgage every month, Arthur needed income and the restaurant did not make enough for him to draw a salary. So Arthur taught school. Every weekday, he would race from school to the restaurant and work until closing. Weekends he just worked at the restaurant. There were no employees. “It was a terrible time,” he laughs today.</p>
<p>After five long years of tremendously hard work, Arthur began to sense some progress. “I cleaned up the place; gave it heart.” Arthur had transformed Prince into a warm family restaurant where people can relax. He gave huge discounts to the Little League teams, who considered Prince their second home. Seniors received a free meal on Arthur’s parents’ birthdays—a tradition still practiced today.</p>

<p>“I sowed the seeds of my success when I could least afford it,” remembers Arthur fondly. “I took in the kids and the seniors and now those kids come back with their own families and their own teams.”</p>
<p>A few years later, Arthur had finally saved enough money to expand the restaurant. “Every part of this building is an appendage of my body,” asserts Arthur today. “Every expansion was paid for in cash. I wouldn’t have it any other way.”</p>

<p>After several expansions over a 10 year period, Prince boasted a large dining room and three function rooms. Then in 1978, Prince added the highly successful 175 seat Giggles Comedy Club, which is now sold out almost every week. Prince Restaurant currently offers seating for about 700 people.</p>
<p>For 44 years, while growing Prince Restaurant into a legendary icon, Arthur Castraberti became known as one of the Boston Area’s most successful restaurateurs. During that time, he poured his heart into the community. He became president of the Route 1 Business Association, founded the Saugus Chamber of Commerce and supported dozens of charities including the Little Leagues, local schools, the Neurofibromatosis and Make a Wish Foundations and the Dana Farber Cancer Institute.</p>
<p>According to the Boston Globe, Arthur Castraberti is “is one of the visionary entrepreneurs who built Route 1 as we know and love it.”</p>

<p>In 2005, Arthur’s son, Steven, took over ownership of Prince Pizzeria and runs it with his wife, Trisha, who oversees finance, marketing and recently redesigned the Comedy Club and function Rooms.</p>
<p>Steven and Trisha are both active in the community, supporting schools, sports teams and charities. Trisha serves on the North Shore Music Theatre Board of Trustees and was nominated for the honor of 2007 North of Boston Businesswoman of the Year.</p>
<p>Arthur is still actively involved, dividing his time between Gloucester, MA and Sarasota Florida, where he volunteers at in the Cardiac Rehab unit of Doctor’s Hospital.</p>
<p>“Steven is doing an excellent job,” says Arthur Castraberti, “We’re just a family business. We worked hard. We still work hard. We live a good life and don’t worry about what the competition does. We focus on what we do.”</p>

With his wife Irene, as the hostess, they worked seven days a week and before long the Hilltop became the number One Steakhouse, a title it still holds today. Frank was soon known to be the &#8220;king of the Hill&#8221; serving over three million customers annually. His success was largely due to his generous nature, which he reflected into his business with great quality and quantity. The Hilltop is still known today for it&#8217;s quality and generous portions at a great value.</span></p>
<p>Over the course of the past 40 years Hilltop has won numerous awards and accolades. Most recently Hilltop was awarded #1 Steakhouse (City search 2003), #2 Independent Restaurant (Restaurant &amp; Institutions Magazine 2002) and many more.</p>
<p>Dick Monfort of High Country Investors in Colorado, acquired assets of the Saugus Hilltop In October 1994.</p>
<p>The Hilltop Steak House Restaurant in Saugus has five rooms function rooms for business meetings, bridal showers, family events, and elegant weddings.</p>
<p>We also offer an off premise catering division called &#8220;The Chuck Wagon&#8221;. The Chuck Wagon concept is simple. With a minimum of fifty people you can hire us to do a barbecue anywhere, corporate or private. We come to your place of business, backyard, park, beach etc. We cook and serve a menu that you pre-select. We bring everything needed for a barbecue. Grills, chefs, wait staff, buffet tables, all paper goods, condiments etc. We cook, serve and clean up.</p>

<p>The Chuck Wagon has been very popular and has blossomed into a full service catering business. <p>Boy, do I love Route 1 in Saugus. From the huge dinosaur overlooking a miniature golf course to a replica of the Leaning Tower of Pisa at Prince Pizza, Route 1 is perhaps the most tacky, cheesy road in the Boston area (not that this is a bad thing). And perhaps one of the cheesiest, and most fun places along Route 1 is the <em>Kowloon</em>, a huge Chinese restaurant and entertainment complex on the northbound side of this road.</p>

<p>The Kowloon has a number of different rooms, complete with funky Polynesian themes, including a boat hanging from the ceiling, a lagoon surrounded by tables, and a luau room. We actually were seated in one of the more subdued rooms off to the side, where we went on to order some rather&#8230;interesting dishes. Mine, for instance, was as wacky as the restaurant itself.</p>
<p>I ordered the flaming ambrosia, which is made as follows: Hollow out a pineapple; put a bunch of chicken fingers inside; fill the pineapple to the top with duck sauce; insert pineapple chunks and maraschino cherries; pour alcohol over the whole thing; set it all on fire. Now I&#8217;m not saying that it was delicious (and it definitely was not healthy), but it was a dinner that I will never forget!</p>
<p>And, of course, I can&#8217;t wait to go back to the Kowloon, as it epitomizes what is so unique about this stretch of highway north of Boston.</p>

<p><span style="font-weight: bold;">Kowloon, China? <p>For those of you who haven’t been, Kowloon is a gaudy, tiki bar/Polynesian restaurant with an identity crisis on Route 1 North in Saugus (Route 1 is a story unto itself). I was out to the comedy club tucked into the leaking attic of the restaurant with my softball team (we lose a lot but we still have fun). And the comedy was good — we saw three comics, including Jim Dunn of Farrelly Brothers movie fame.</p>
<p>The restaurant, however, was exactly how I remembered it. Which was a lot less than good.</p>
<p>The menu is expansive, full of lead-laden dishes from a variety of different countries and culinary styles, with PuPu platters that drop to the bottom of your stomach like a brick and sushi that is, at best, suspect. Each section of the menu is color-coded for different types of cuisine: red for Chinese, sky blue for sushi, orange for Thai, etc.</p>
<p>Not much has changed in Kowloon since it first opened in 1950. It’s a place full of multiple banquet rooms, fake palm trees and cocktails served in plastic pineapple cups. When I was in high school it was the kind of place you’d go to after a prom if you had a bad date or if you had a good fake i.d. I think the last time I was there was at least 10 years ago, on Christmas night with a couple of friends who, like me, had nothing better to do after a day with our respective families.</p>
<p>And despite all this, there were throngs of people flooding into Kowloon even after our show got out at 9. It’s the type of place where middle aged men who haven;t played sports in 20 years can feel comfortable wearing nylon warm up suits. There are wanna-be toughs pulling I-Rocs up to the valet. There are huge family gatherings, a high school field trip and people who think that a Scorp Bowl for two is a perfectly acceptable drink to order three or four times — for <span style="font-style: italic;">themselves</span> — is perfectly acceptable.</p>
<p>To know why Kowloon remains so popular is to know Route 1. After college I took a job as a community reporter on the South Shore and was surprised at how many more zoning disputes there were in the quaint South Shore towns. And the reason? They didn’t have a Route 1 to throw all the places that no one else wanted in their backyard.</p>

<p>Want to build a massively tacky Chinese restaurant? Put it on Route 1. Big box retail? Route 1. Route 1 is the perfect place for a giant steak house with scores of life-sized plastic cattle grazing on the patch of lawn between the building and the highway. Want to open a porn store? Sleazy motels that boast heart-shaped jacuzzis and rent rooms by the hour? A strip bar? Put it on Route 1. How about a miniature golf course with a day-glo orange Tyrannosaurus Rex hovering over the highway? You guessed it — Route 1.</p>

<p>By the end of the summer Hooters waitresses dressed in hot orange shorts will be serving up the company&#8217;s trademark chicken wings at a franchise in Saugus.</p>
<p>The Board of Selectmen voted 4-0 Tuesday to transfer an all alcoholic common victualer&#8217;s license to Saugus Wings LLC, paving the way for a Hooters to open at 1143 Broadway, the location formerly occupied by Famous Dave&#8217;s BBQ.</p>
<p>Board members approved the application after Saugus Wings LLC agreed to not hire employees under 18 and to post the Hooters corporation&#8217;s non-harassment policy in a visible location.</p>
<p>Saugus Wings LLC is the official name of the company that will be doing business as Hooters on Route 1 South.</p>
<p>Franchise owners Marc Phaneuf and his son Marc Phaneuf Jr. appeared before the selectmen to request the transfer of the all-alcoholic license from the parent company of Famous Dave&#8217;s.</p>
<p>Additionally, the Phaneufs asked the board to grant an entertainment license to accommodate 25 to 30 flat screen televisions and a satellite radio system inside the restaurant.</p>
<p>Phaneuf told the selectmen his group has 15 years of experience running three different Hooters restaurants in Connecticut, where it established an exemplary track record.</p>
<p>In his opening presentation Phaneuf described Hooters as a &#8220;casual sit down restaurant&#8221; with chicken wings as its mainstay menu item. He stressed management doesn&#8217;t tolerate rowdiness and that staff are TIPS certified and trained at recognizing fraudulent forms of identification.</p>

<p>For instance, Kelleher inquired what Saugus Wings LLC plans to do to make sure employees aren&#8217;t sexually harassed on the job.</p>
<p>Phaneuf Jr. responded that Hooters follows an open door policy in which employees are encouraged to discuss workplace problems confidentially with management.</p>
<p>If the issue cannot be resolved this way, employees are welcome to take their concerns to a district supervisor, Phaneuf Jr. informed the board.</p>
<p>Kelleher also questioned if Hooters employs any workers under 18 years old.</p>
<p>Phaneuf Jr. acknowledged Hooters does in fact hire kitchen staff who have yet to turn 18. That prompted Kelleher to ask if Saugus Wings LLC would agree to a stipulation to only hire employees who are 18 and over.</p>
<p>&#8220;I&#8217;d prefer not to, but as long as we don&#8217;t break any state laws, I&#8217;d be willing to agree to that,&#8221; Phaneuf Jr. said.</p>

<div><strong>No bikini nights</strong></div>
<p>Saugus Wings LLC also indicated it would display the Hooters non-harassment policy in the employee break room. Phaneuf Jr. added that his Saugus franchise would refrain from hosting the bikini night promotions held at other Hooters locations throughout the country.</p>
<p>After a half-hour of questions the selectmen voted 4-0 in favor of the application submitted by Saugus Wings LLC. Chairman Donald Wong recused himself from the discussion over a conflict of interest because he is the president of Kowloon.</p>
<p>&#8220;I think this will be a plus for the town and I wish them (Hooters) the best of luck,&#8221; Selectman Stephen Horlick said.</p>

<div><strong>Coming by Labor Day</strong></div>
<p>Following the public hearing, Phaneuf Jr. told the Advertiser renovation on the building at 1143 Broadway is scheduled to begin shortly. The expectation is for construction to take between two and three months.</p>
<p>&#8220;We are shooting for an August opening,&#8221; Phaneuf Jr. said. &#8220;We&#8217;re very pleased with the outcome tonight and we are happy the selectmen allowed us to bring our restaurant to Saugus.&#8221;</p>
<p>Hours of operation at the Saugus location will be 11 a.m. to midnight, Monday through Thursday; 11 a.m. to 1 a.m. Friday and Saturday; and noon to 11 p.m. on Sunday.</p>
<p>Saugus Wings LLC was awarded the rights to open a restaurant in Massachusetts after the previous group that sought to do the same went into bankruptcy.</p>
<p>In 2003 the selectmen voted 3-1 to deny Triangle Entertainment an application to open a Hooters at the former Tantra nightclub.</p>

<p>At the time board members cited community opposition as a reason for their decision, as well as expressing concern that Hooters is a restaurant where innuendo and joking about female sex appeal are part of the work environment.</p>
<p>Triangle Entertainment appealed the decision to the Alcoholic Beverages Control Commission, which overturned the board&#8217;s denial.</p>
<p>That led the selectmen to take a second vote to allow Hooters to open at Tantra, but the franchise owners never followed through with the plan because of financial difficulties.</p>
<p>During Monday&#8217;s public hearing no one spoke against the latest proposal to open a Hooters in town.</p>
<p>In fact, one resident wrote the board a letter in which he indicated the town could do a lot worse if some other business moves in to 1143 Broadway.</p>
<p>Kelleher conceded the Hooters brand is not one he welcomes with open arms for Saugus. However, he noted past experience on the board has shown him the ABCC would likely overturn any denial of the application and potentially cost the town thousands of dollars in attorney fees.</p>

<p>Originally founded by Karl Engel in 1958, the kitchen today continues to use the same old world recipes and the finest meats and spices to make authentic European sausages, cold cuts and smoked meats. We smoke our sausages, bacon and pork chops on site daily. You can smell and taste the difference!</p>
<p><strong>Directions</strong></p>
<p>From Route 1 North: Look for Karls Sausage Kitchen on the right immediately after the Route 129 Exit (Walnut Street). We are on the crest of the hill.</p>
<p>From Route 1 South: At the Route 129 exit, take the second exit (Walnut Street) Exit. At the top of the ramp, take left, then left again back onto Route 1, this time going North. Look for Karls Sausage Kitchen on the right immediately after Route 129 Exit (Walnut Street). We are on the crest of the hill.</p>
<p>From Points North: Take Route 95 South. Follow signs for Route 1 South. Take the Route 129 ( Walnut Street) Exit. <p>Saugus is a town in Essex County, Massachusetts, United States. The population was 26,078 at the 2000 census.</p>

<p>History<br />
Saugus was first settled in 1629 and was officially incorporated in 1815. The Saugus Iron Works National Historic Site, in operation from 1646-1668, was the first integrated iron works in North America. It is now a National Historic Site.</p>
<p>Geography<br />
According to the United States Census Bureau, the town has a total area of 30.4 km² (11.8 mi²). 28.5 km² (11.0 mi²) of it is land and 2.0 km² (0.8 mi²) of it (6.55%) is water. While the town has a shoreline, it doesn&#8217;t have a beach.</p>
<p>Demographics<br />
As of the censusGR2 of 2000, there were 26,078 people, 9,975 households, and 7,142 families residing in the town. The population density was 916.2/km² (2,373.7/mi²). There were 10,122 housing units at an average density of 355.6/km² (921.3/mi²). The racial makeup of the town was 97.32% White, 0.44% Black or African American, 0.05% Native American, 1.20% Asian, 0.04% Pacific Islander, 0.27% from other races, and 0.68% from two or more races. Hispanic or Latino of any race were 0.97% of the population. The U.S Census also shows that 36% is of Italian descent, and 24% is of Irish descent dominating the town. The Italian population mostly migrated over the years from East Boston or Revere, the Irish from South Boston or Somerville.</p>
<p>There were 9,975 households out of which 27.5% had children under the age of 18 living with them, 57.0% were married couples living together, 10.7% had a female householder with no husband present, and 28.4% were non-families. 24.3% of all households were made up of individuals and 12.1% had someone living alone who was 65 years of age or older. The average household size was 2.59 and the average family size was 3.11.</p>
<p>In the town the population was spread out with 20.5% under the age of 18, 6.5% from 18 to 24, 29.3% from 25 to 44, 26.1% from 45 to 64, and 17.6% who were 65 years of age or older. The median age was 41 years. For every 100 females there were 91.7 males. For every 100 females age 18 and over, there were 88.1 males.</p>
<p>The median income for a household in the town was $55,301, and the median income for a family was $65,782. Males had a median income of $43,219 versus $32,783 for females. The per capita income for the town was $25,524. About 3.1% of families and 4.2% of the population were below the poverty line, including 4.5% of those under age 18 and 7.2% of those age 65 or over.</p>
<p>Organizations<br />
There is an abundance of local organizations based within Saugus.</p>
<p>The Saugus Historical Society works to cultivate an interest in the history of the town of Saugus, and to collect and preserve all matter pertaining to the town&#8217;s history and citizenry. The organization was begun in 1928.</p>
<p>The Saugus Chamber of Commerce started in 1971 under the name of the Route One Businessmen&#8217;s Association. It changed its name in 1988 to the Route One Area Business Association; it became the Saugus Chamber of Commerce in 1991. The Saugus Business Partnership is sometimes confused with the Chamber, but is a distinct organization formed in 2003.</p>
<p>The Saugus Action Volunteers for the Environment (SAVE) incorporated in 1973 and works toward a &#8220;better quality of life through environmental concern and action&#8221;. It serves at once both as a volunteer organization (performing many duties including helping maintain the local tree farm) and a political organization (staging protests and taking public stands on local laws).</p>
<p>The Saugus River Watershed Council is a non-profit organization founded in 1991 to protect and restore the natural resources of the Saugus River watershed. We are working to improve water quality, restore river habitat and fisheries, educate students about the environment, and promote public access and enjoyment of the watershed.</p>
<p>The Theatre Company of Saugus, founded in 1968 as the &#8220;Town-Criers,&#8221; produces several amateur plays each year. The TCS recently had the honor of performing the play Interview by Jean-Claude Van Itallie in Belgium.</p>
<p>Other local organizations worthy of mention include the Friends of Saugus Town Hall, the Friends of Breakheart Reservation, the Saugus High School Alumni Association, Boy Scout Troops 61 and 62, the Essex UFOlogists, and the Hammersmith Quilters&#8217; Guild.</p>
<p>There is also an association to rennovate the track behind their middle school, for future use by their high school and middle school track and field teams. Curently, they have aquired the money they need to draw up the plans for the rebuilding, and are collecting money to go through the operation. Their booth at the annual Founder Day, is not to be missed by citizens.</p>
<p>Saugus also has local chapters of the Veterans of Foreign Wars, American Legion, Masons, Rotary Club, Lions, Benevolent and Protective Order of Elks, the Knights of Columbus, the Kiwanis Club, and the Rotary Club. (More information on these clubs can be found on their respective websites)</p>
<p>Saugus is also home to New England&#8217;s third oldest non-professional theatrical group, the Theatre Company of Saugus. The company is noted for attracting celebrities to both directoral responsibilities and stage. In the past it has hosted thespian and president William Howard Taft in several roles and currently they are playing host to actor/director Lance Norris for their production of Sabrina Fair.</p>

Saugus has a local cable station and a handful of local newspapers including The Saugus Advertiser, The Saugus Advocate, Saugus.com and Saugus.net</p>
<p>Stephen King&#8217;s Cell (novel) features a scene where the protagonists walk down the Miracle Mile.</p>
